Apricots are related to peaches and have smooth skin that ranges in colour from bright yellow to deep orange. They have a sweet-tart flavour and the pit easily falls out once the fruit has been halved. Enjoy apricots raw as a snack, baked in tarts, or poached and served with whipped cream.

Prep: Rinse and pat dry just before using. Slice in half to remove the pit.
Storage: Refrigerate in a plastic bag at 4 °C (40 °F) or cooler for up to five days.
